Veggie Egg Cup
When we are meal prepping for the week, this has become a go to in our house. They are super simple to put together and have so much flavor. They also warm up nicely in the microwave when we are at working. What’s even better is the vegetable ingredients can be changed up to whatever you’re craving that week. Sometimes we add in jalapeno or green chili.
Ingredients:
12 large eggs
Sea salt, pepper & garlic powder to taste
1 C chopped mushrooms
1 medium red pepper, finely chopped
2 green onions, thinly sliced
½ C chopped spinach
½ C bacon or ham (optional)
Heat oven to 375 F
Lightly line a 12 cup muffin tin with olive oil or cooking spray
Place eggs in a large bowl, whisk to blend. Season with salt, pepper and
garlic.
Add mushrooms, bell pepper, green onions, spinach & meat. Mix well
Pour egg mixture into muffin cups. Bake for 15-20 minutes, or until toothpick inserted into the center of the cups comes out clean.
I especially love when the kids join in and help us make our meals. Leyana did a great job pouring the egg mixture into each of the muffin tins. Not only did she allow me to do something else, she is gaining the confidence in doing things on her own and learning about healthy eating!
