Almond Butter Chocolate Cups
I don’t know about you but my favorite snack is chocolate and peanut butter anything! Trying to make something healthy that has chocolate and nut butter can be a challenge but I’m here to help you out.
Lately I haven’t used as much peanut butter because I learned more about paleo (which is information for a completely different post) but man oh man do I enjoy almond butter. A friend of ours made us some peanut butter cups and they were so yummy I had to try my hand at making them with almond butter. They were a success and SO simple to make
Ingredients:
- 4 tablespoons coconut oil
- 1 Scoop Chocolate Shakeology
- 6 teaspoons almond butter
- Small muffin cups
- Cupcake tin
Start with your coconut oil and Chocolate Shakeology in a bowl. The coconut oil needs to be in liquid form,
so you may need to melt it. Place the muffin cups in the tin. With a spoon, scoop the coconut oil chocolate mix into the muffin cups, filling only to 1/3rds full.l Place the tin in the freezer so that the coconut oil can solidify again. Make sure to place the other half of the coconut chocolate mix in the fridge.
Once the bottom half is solid, take the tin out of the freezer. Place a teaspoon of almond butter in each muffin cup. Once the almond butter is in, cover each with the remaining coconut chocolate mix (you’ll need to get it to liquid state again).
Place the muffin tin in the freezer one more time so that the top portion can solidify.
I leave my almond cups in the freezer until I am ready to eat them, especially during the summer because it’s so warm and the coconut oil liquefies so quickly.
